Cinnamon Candied Almonds are one of the best holiday treats! I’ve been making these for years and once you try them you’ll see why. They are easy to make and seriously delicious!
You wouldn’t believe how quickly a batch of these almonds disappears at my house! And they are a treat I feel better about feeding my family versus cookies, although we have plenty of those around here this time of year too.

INGREDIENTS
- 1/2 cup (110g) packed light-brown sugar
- 1/2 cup (100g) granulated sugar
- 2 1/2 tsp Siagon cinnamon
- 3/4 tsp fine sea salt
- 4 cups (600g) Fisher Whole Almonds
- 1 large egg white
- 2 tsp water
- 2 tsp vanilla extract
INSTRUCTIONS
- Preheat oven to 250 degrees. Line a rimmed 18 by 13-inch baking sheet with parchment paper or a silicone baking mat.
- In a medium mixing bowl whisk together brown sugar, granulated sugar, cinnamon and salt, set aside.
- Place almonds in a large mixing bowl.
- In a separate small mixing bowl whisk egg white, water and vanilla until frothy. Pour over almonds in mixing bowl and toss to evenly coat.
- Add sugar mixture to almonds and toss to evenly coat. Spread into an even layer on prepared baking sheet.
- Bake in preheated oven, tossing every 15 minutes (three times throughout baking), for 60 minutes total.
- Let cool then store in an airtight container for up to one week.
