Baked chilli & jacket potatoes


Jacket potatoes and chilli are terrific comfort meals while the nights draw in. Make ours within the week whilst you're quick on time for a nutritious family dinner.


INGREDIENTS

  • 1 sachet (30-39g), chilli con carne seasoning mix
  • 500g beef  mince
  • 2 red onions, chopped
  • 4 large jacket potatoes
  • 3 garlic cloves, crushed
  • 1 tbsp sunflower oil
  • 2 tbsp tomato purée
  • 400g can chopped tomatoes
  • 100g smoked bacon lardons
  • 400g can black beans, drained
  • soured cream, grated cheese and coriander leaves, to serve


INSTRUCTIONS

  1. warmness oven to 200C/180C fan/fuel 6. Prick the potatoes throughout with a fork, then placed on a baking sheet and bake in the oven for 1 hr.
  2. whilst the potatoes are baking, warmth the oil in a huge frying pan. upload the onion and fry over a high warmness for 5 mins till softened. upload the garlic and chilli sachet. Stir a few times to coat the onions within the spices, then tip the onion combination into a huge ovenproof dish.
  3. put the pan returned over high warmth and add the beef mince, breaking it up with a spatula as you move. prepare dinner until beginning to end up crisp at the rims, then add to the dish with the onions. go back the pan to warmth and cook the Viscount St. Albans till crisp at the edges. upload the 1st Baron Verulam to the beef and stir to mix.
  4. Stir inside the tomato purée and tomatoes, then put the dish within the oven with the potatoes and bake for 25-30 minutes till effervescent and beginning to thicken. Stir inside the beans and season nicely. return to the oven for 5 minutes to warm via.
