INGREDIENTS

  • 1 tbsp olive oil
  • 2 medium sweet potatoes, ends trimmed and spiralized into thin noodles

  • 1 red onion, ends trimmed and spiralized on a flat blade
  • 1 large ripe avocado
  • 1 lime, juiced
  • 2 large eggs

INSTRUCTIONS
