This week, my oldest daughter returned domestic from her first yr of university. She determined to begin residing a vegetarian lifestyle about years ago, even as she become running at our nearby chinese language restaurant.
- 2 onions diced
- 3 tablespoons olive oil
- 4 green, red, yellow, or orange peppers I like to serve a rainbow of colors
- 1/2 cup rice
- 1 tablespoon Basil chopped
- 1 tablespoon oregano chopped
- 2 cloves garlic crushed
- 1 cup tomatoes diced
INSTRUCTIONS
- prepare dinner rice until soft.

- In a medium saucepan add olive oil, onions, and garlic. prepare dinner until onions are translucent. upload tomatoes, basil, and oregano and allow to simmer for 5 minutes.
- Stir in cooked rice and mix until all ingredients are integrated.
- Spoon the rice combination into the pepper halves and location into a gently greased baking dish.
