Ingredients

  • 1.5 lbs boneless, skinless chicken breast
  • 1 red bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 1 sweet onion, sliced
  • 1 14.5 oz tomatoes with green chilis (like Rotel)



Fajita Spice Blend

  • 2 teaspoons chili powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper



Instructions

  1. Place sliced peppers and onion on the bottom of slow cooker.
  2. Place chicken breasts on top of peppers and onions. 
  3. In a small bowl, mix together fajita spice blend. Top the chicken with the spices.
  4. Pour can of tomatoes with green chilis on top of chicken. 
  5. Cover with lid and cook on high for 3-4 hours or low 6-8 hours. Once chicken has cooked, either slice the chicken or shred and return to slow cooker.
