One of our neighborhood stores has these treats in their pastry kitchen called overhang treats that are essentially a fleecy cake like treat. I have been on a journey to make sense of how to make something comparable . I have looked through the web on the most proficient method to make treats fluffier and thought of a few thoughts.
One of the all the more fascinating things I found was adding cornstarch to the flour blend. I read it would mellow the protein in the flour and make a progressively delicate treat. This little stunt in addition to additional heating powder appears to have worked perfectly. I took my essential chocolate chip treat formula and adjusted it a bit and the outcomes were cushioned, delicate and excessively yummy.

- 3 cups all purpose flour
- 2 tablespoons cornstarch
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 2 sticks room temperature butter
- 2 eggs
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 2 teaspoons vanilla extract
- 2 cups semi sweet chocolate chips
Instructions
- Preheat oven to 350 and line cookie sheet with parchment paper
- Sift together the flour, cornstarch, baking powder, baking soda, salt and set aside
- In a separate bowl or stand up mixture cream together the room temp butter, both sugars , eggs and vanilla. Blend until smooth and fluffy
- Add the flour mixture to the butter mixture a little at a time until all of it is incorporated
- Fold in chocolate chips
- I used a 1 1/2 tablespoon cookie scoop and place the mounds of cookie dough about 2 inches apart
- Bake 9-11 minutes depending on your oven-the edges should be slightly brown
