As I was trying to decide what I wanted to do for Valentine’s Day this year, my fabulous daughter suggested that we make a Valentine Fruit Pizza. We love fruit pizza, so of course we had to give it a try… and heart shaped…it couldn’t get any better.
INGREDIENTS:
CRUST:
- 1/4 cup butter, softened
- 1/2 cup sugar
- 1 egg
- 1/2 tsp. vanilla
- 1 1/4 cups flour
- 1/4 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
FILLING:
- 4 oz. cream cheese, softened
- 1/4 cup powdered sugar
- 1 cup whipped topping (I used Cool Whip)
- FRUIT TOPPING:
- I used raspberries, blueberries, and blackberries, but you can use whatever types of fruit you like.
GLAZE:
- 1/4 cup sugar
- 2 tsp. cornstarch
- 1/4 cup water
- 1/8 cup lemon juice
INSTRUCTIONS
- For crust: Cream butter and sugar together. Add in egg and vanilla, mix. Add flour baking powder, baking soda, and salt, mix. Press dough into heart shape onto a greased cookie sheet. Bake at 350 degrees for 12-15 minutes or until golden brown. Cool completely.
- For glaze: Mix sugar, cornstarch, water, and lemon juice in a small saucepan. Bring to a boil over medium heat and then boil for a couple of minutes until thickened. Cool for about 30 minutes.
- For Filling: Beat cream cheese and powdered sugar. Add whipped topping and mix well.
- Now put it all together! Spread filling onto cookie crust. Add your desired fruit. Then drizzle the glaze over the top. Store finished Valentine Fruit Pizza in the refrigerator.
