VALENTINE FRUIT PIZZA WITH LEMON GLAZE #VALENTINE DAY


As I was trying to decide what I wanted to do for Valentine’s Day this year, my fabulous daughter suggested that we make a Valentine Fruit Pizza. We love fruit pizza, so of course we had to give it a try… and heart shaped…it couldn’t get any better.


INGREDIENTS:
CRUST:

  • 1/4 cup butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 1/2 tsp. vanilla
  • 1 1/4 cups flour
  • 1/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
FILLING:
  • 4 oz. cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 cup whipped topping (I used Cool Whip)
  • FRUIT TOPPING:
  • I used raspberries, blueberries, and blackberries, but you can use whatever types of fruit you like.
GLAZE:
  • 1/4 cup sugar
  • 2 tsp. cornstarch
  • 1/4 cup water
  • 1/8 cup lemon juice

INSTRUCTIONS

  1. For crust: Cream butter and sugar together. Add in egg and vanilla, mix. Add flour baking powder, baking soda, and salt, mix. Press dough into heart shape onto a greased cookie sheet. Bake at 350 degrees for 12-15 minutes or until golden brown. Cool completely.
  2. For glaze: Mix sugar, cornstarch, water, and lemon juice in a small saucepan. Bring to a boil over medium heat and then boil for a couple of minutes until thickened. Cool for about 30 minutes.
  3. For Filling: Beat cream cheese and powdered sugar. Add whipped topping and mix well.
  4. Now put it all together! Spread filling onto cookie crust. Add your desired fruit. Then drizzle the glaze over the top. Store finished Valentine Fruit Pizza in the refrigerator.
